Recreating the Cucumber Moscow Mule

One of the greatest things about traveling is getting to bring a little of each new experience home with you. We were recently gifted with a lovely set of copper mugs and Nambe cheese board as a thank you for attending the launch of the redesigned Kia Cadenza in Middleburg, Virginia. The copper mugs were reminiscent of lovely evenings spent sipping Moscow mules at the Salamander Resort and Spa before sunset and watching the horses over the rich green fields. It was such a relaxing location brimming over with hospitality and charm.

It wasn’t long after their arrival that those copper mugs were begging to be filled. We may have been lacking horses but everything else needed was easily accessible to recreate memories of our Virginia luxury experience. Our local friends were more than happy to join us in recreating the camaraderie, conversation, and of course the cocktails! The Cucumber Moscow Mule is an incredibly refreshing beverage and easy to make requiring only a few simple ingredients.

Cucumber Moscow Mule

Ingredients:

  • Cucumber Vodka
  • Ginger Beer
  • fresh limes
  • cucumber
  • ice, crushed or cubed
  • optional: candied ginger for garnish ( I know I said “optional” but it’s realllly worth picking up if you don’t have on hand. It was my favorite addition.)

Directions: 

1. Quarter cut the limes & cut the cucumber into thin wheels
2. Add ice to copper mug ( or glass)
3. Pour 1.5 oz – 2 oz of Cucumber Vodka over ice
4. Squeeze 1 lime quarter over ice in mug and add a 3 cucumber wheels, leave the limes on top of the ice after squeezing
5. Pour ginger beer in to fill mug
6. Stir all ingredients & garnish with cucumber wheel and candied ginger

While I was researching the best recipe for this cocktail I learned a lot about its unique history and about the copper mug itself. Both are wonderful complimentary stories to share as icebreaker conversations or just interesting fun facts. I can’t wait to share them with you in a future post!

I have been monitoring the nutrition habits of each of our children since…..well, practically before they were born. As infants, we wrote down everything they ate. Since planning for success is key, I made a list of all the smoothie ingredients I would need on my next shopping trip to Walmart. Most everything was in the produce section with the exception of the Jif Peanut Powder which was easily found in the regular peanut butter section, on the top shelf (only the best for our smoothies!)

This Peanut Butter and Jelly smoothie, made with Jif Peanut Powder is protein packed and has an added serving of greens. Jif Peanut Powder is made from just one ingredient – fresh roasted peanuts – and has no added sugar or salt like competitors.

Ingredients:

  • 1/2 large banana (sliced, frozen)

Enjoying the last moments of Summer and Gevalia Iced Coffee with Almond Milk

As excited as we were to shop for school supplies, model our back-to-school-outfits, and meet our new teachers, we have been equally sad to see summer days dwindle away. While school may officially be back in session, it will still feel like summer in Texas for several more weeks. We decided to find ways to enjoy every bit of sunshine and summertime we can get.

Hatch Pesto Spaghetti and Zoodles with Chicken

Mid-August means two things in my Texas kitchen- it’s too hot to turn on the oven unnecessarily… and peak season Hatch Chiles have just made it to my local market! For the rest of the month, we find ways to sneak those fabulous roasted chiles into just about every dish imaginable- from the obvious options like quesadillas to and unexpected cold pesto pasta dish. I love making this recipe for all the right reasons: you get the heat from the chiles without having to endure a hot entrée temperature on steamy summer nights, it sneaks some veggie “noodles” into my pasta-loving-but-veggie-avoiding children’s mouths, and I only have to turn on the stove briefly to boil water!

Another great thing about this cold pasta dish is that the leftovers store and transport beautifully for lunch the next day. That is… if there are any left over!

Hatch Pesto Spaghetti and Zoodles with Chicken

10 ounces Dreamfields Spaghetti
4 cups low sodium, fat-free vegetable broth
1 tablespoon extra virgin olive oil
4 mild to hot Hatch chiles (select according to your heat preference), roasted
1/2 cup prepared pesto
12 ounces precooked chicken breast, diced
2 medium zucchinis, spiralized into noodles (if you do not have a vegetable spiralizer, you can thinly julienne the zucchini or use a peeler to make pappardelle style “noodles”)
1/2 cup shredded Hatch Chile Monterey Jack cheese*
1. In tall stockpot, add 2 quarts of water and vegetable broth; bring to a rapid boil.

2. Cook pasta according to package directions. Drain and rinse with cold water. Place pasta in large bowl. Add olive oil to pasta; toss to combine.

3. As the pasta cools, de-vein and de-seed the roasted peppers. Add peppers and prepared pesto to food processor; pulse until fully blended.

4. In large bowl, combine spaghetti and zucchini noodles. Add chicken; toss to combine.

5. Add half of the pesto to pasta; toss to distribute, adding more to taste one tablespoon at a time.

6. Transfer to bowls and serve topped with shredded Hatch Chile Monterey Jack cheese.

Note: Substitute Pepper Jack cheese, if desired.
Makes 6 servings.

*To make this 21 Day Fix friendly: Portion out 1 yellow serving of pasta, 1 green serving of zoodles, 1 red serving of diced chicken and .5-1 orange serving of pesto and toss together.

Nutrition information (1/6 of recipe): 420 calories; 28 g protein; 43 g carbohydrates; 15 g total fat; 4 g saturated fat; 55 mg cholesterol; 460 mg sodium; 6 g total dietary fiber.
